To apply the techniques of modern controlled environment horticulture crop production to a small vegetable production system for space exploration. Challenges include optimizing productivity in a small space using LED lighting, minimizing energy and crew labor usage and developing protocols that are easily followed by untrained crew.

Menu integration, postharvest handling and storage protocols
Integrating fresh produce with a stored diet requires menu planning to enhance dietary quality and enjoyment. Postharvest handling of fruits, vegetables and herbs requires careful control to prevent contamination and maximize shelf-life, and off-Earth handling presents additional challenges and responsibilities. Fresh produce must be sanitized for consumption, and stored with limited facilities available. Hazardous microbial growth during handling and storage must be prevented, and prevention techniques must be sustainable using a minimum of energy and crew labor.

Plant monitoring/control network
To apply sensor and feedback control technology to a small vegetable production system for space exploration. Challenges include monitoring plant stress and environmental conditions and adjusting controllable aspects of the plant growth environment while minimizing energy and crew labor usage and developing protocols that are easily followed by untrained crew.
